Artichoke (or crab) dip

I stole this from my friend Kara, and then bastardized it a a bit :P

Heat oven to 400'

1 C cream cheese
1/2 C sour cream
1/2 C chopped onion
1 can of artichoke hearts, chopped
1 T fresh lemon juice
1/2 t pepper
1 C parmesan cheese
3 T gluten-free bread crumbs.

Mix all the above together. I usually soften the cream cheese first in the microwave to make it easier to mix. Spread the bread crumbs evenly on top.

Cook for 20 min or until bubbly and browning.

I serve with rice crackers or organic corn chips. Heck, I can just eat this with a huge spoon!

To make crab dip, substitute 1 can of white crab meat for the artichokes, and you have crab dip!!
